What is it?
Pad Thai made with glass noodles instead of rice noodles. Glass noodles are made from mung bean starch; they soak up the tamarind sauce and stay soft and springy — a lighter way to enjoy Pad Thai.

- Glass noodles (mung bean)
- Egg
- Firm tofu
- Dried shrimp
- Sweet preserved radish
- Garlic chives
- Bean sprouts
- Roasted peanuts
- Shallots
- Tamarind sauce
- Palm sugar
- Fish sauce
- Sweet chili flakes
- Lime
How we cook it
- 1Soak the glass noodles until just soft
- 2Fry shallots, tofu and dried shrimp, then add the noodles and tamarind sauce
- 3Add egg, bean sprouts and chives; toss quickly so the noodles stay springy
- 4Top with peanuts and serve with lime
A little history
“Boran” means old-fashioned. Many long-standing Pad Thai shops have always offered a glass-noodle version alongside the rice-noodle classic.
