What is it?
Thailand’s most famous dish. Thin rice noodles are wok-fried over high heat with our house tamarind sauce, egg, tofu, dried shrimp and sweet preserved radish, then served with roasted peanuts, fresh bean sprouts, garlic chives and lime so you can season it the way you like.

- Tamarind sauce
- Palm sugar
- Fish sauce
- Sweet chili flakes
- Lime
How we cook it
- 1Fry shallots, tofu and dried shrimp until fragrant
- 2Add the noodles and tamarind sauce; toss over high heat until soft and glossy
- 3Crack in the egg and fold it through; add bean sprouts and chives at the end
- 4Plate, sprinkle with peanuts and serve with lime
A little history
Stir-fried noodles arrived with Chinese settlers in old Siam. Around the late 1930s and 1940s, the government of Field Marshal Plaek Phibunsongkhram promoted a “Thai” version made with local rice noodles, tamarind and palm sugar — and named it Pad Thai. It went on to become the country’s national dish.
