What is it?
Fresh wide rice noodles wok-fried with egg, Chinese kale and meat, seasoned sweet-savoury with soy sauce. The noodles are left to catch the wok for a light smoky char. Not spicy.

- Chinese kale
- Egg
- Soy sauce
- Sugar
- Pork / chicken, as chosen
How we cook it
- 1Stir-fry the meat with egg
- 2Add the noodles and soy sauce; let them sear against the wok
- 3Add the Chinese kale, toss until just wilted, and serve
A little history
“See ew” comes from the Chinese word for soy sauce. Pad See Ew is a Chinese-Thai noodle dish that has long been a staple of Thai noodle shops.
