What is it?
A batter of crispy flour and tapioca starch is fried on a flat pan until the edges turn crunchy, then topped with mussels and egg. Crunchy and chewy in one plate — eaten with sweet chili sauce.

- Mussels
- Egg
- Crispy frying flour
- Tapioca starch
- Sweet chili sauce
How we cook it
- 1Mix crispy flour, tapioca starch and water into a batter
- 2Pour onto a very hot oiled flat pan and fry until the edges crisp
- 3Add mussels, crack in the egg and flip until cooked through
- 4Serve with the dipping sauce
A little history
Hoi Tod and Or Suan both come from the oyster omelette of Teochew Chinese immigrants. Thais split it into two styles: the crispy one is called Hoi Tod, the soft and sticky one Or Suan.
